Recipe: Thankful For This Delicata Squash & Brown Rice Salad

It’s my favorite holiday of the year, T H A N K S G I V I N G! I love the time I get to spend at home with my family relaxing…but also enjoying all the food, because let’s be real that’s what this holiday is all about! My mom usually takes care of the cooking (momma stern is major inspo)which I couldn’t be more fine with, but I wanted to at least bring a side home with me! I’ve been kinda obsessed with delicata squash lately and knew I wanted to use it roasted so I came up with this super simple delicata squash and rice salad. It’s a dish that will lighten up your Thanksgiving table but still stand up next to the other sides.

Delicata Squash + Rice Salad

1 delicata squash, cut down the center, sliced and seeds removed

2 cups cooked brown rice

1/2 cup chopped and toasted walnuts

1/2 cup pomegranate seeds

2 tblsp chopped fresh parsley

For Roasted Delicata Squash

-Heat oven to 400F. Take the delicata squash and cut it right into 1/2 inch rounds, removing the seeds. Lay the squash rings on a greased and foiled line baking sheet. Drizzle with coconut oil, maple syrup, cinnamon, ginger, sea salt and a few dashes of chili powder for mild heat. Toss and coat the squash rings evenly. Bake for 25 mins, turning half way through. Once browned remove squash and allow to cool.

For Maple Vinaigrette 

Juice of 1/2 lemon

1/4 cup olive oil

1 tblsp stone ground mustard

1 tsp dijon mustard

1 tblsp apple cider vinegar {you can always add more but a little goes a long way}

2 tblsp maple syrup {any sweetener works though}

Salt + pepper to taste

Whisk in a small bowl to combine

Assemble Salad:

Once the squash rings are cooled, dice into bite size pieces, reserving a few whole rings for presentation if desired. Then toss all ingredients together and drizzle with the vinaigrette. If you’re going to be traveling with this, i. e. Friendsgiving, I’d pack the vinaigrette separately from the salad and then drizzle once you’re there!
