Maybe you're reading this on a beach somewhere {if so, JELLY} or maybe you're walking down a city block and need a quick bite before your next workout. Either way these Coconut Ginger Balls will totally do the trick! I love making bites like these because not only do they satisfy my need-note how I said "need"- for something sweet, but they are also jam packed with nutritious ingredients; With my favorite being the ginger!

Ginger is considered a superfood for so many reasons, but here’s why I like to add it in:
~Contains gingerol, a powerful anti-inflammatory + anti-oxidant property which also aids in digestion
~Stabilizes blood sugar
~Reduces risk of heart disease, cancer and Alzheimers

Here for ALL OF THAT! Food is a sneaky b**** and in certain aspects can actually act like medicine without you even knowing it, cool right?

So whether you're on a beach or want to pretend like you're on one~head to your closest Nuts To You and grab all the goods to whip these little coconut ginger balls up!

Coconut Ginger Balls

2 tblsp fresh grated ginger
1/2 cup pitted dates
1/4 cup goji berries
3/4 cup cashew butter
1/3 cup toasted coconut
dash sea salt + dash cinnamon
1 cup rolled oats

Start by heating dates + goji berries in a bowl with 1/3 cup water. Then add all ingredients {keep some toasted coconut out to roll balls in} in food processor. Once combined, refrigerate mix for about 30 mins. Once chilled, roll mix into balls then toss in coconut! You can keep them in the fridge for up to two weeks + even longer in the freezer. Done and done.
